Maysville Transparent Pie

This Maysville tradition is in the form of a sweet custard pie, and updated by substituting agave syrup of corn syrup. This Kentucky pie will serve up joy!



  • 1 wholly wholesome pie crust


  • 5 whole eggs
  • 2 cups sugar
  • 1 cup butter
  • 1 teaspoon vanilla
  • 2 Tablespoons agave syrup


  1. Preheat oven to 350F
  2. Melt butter and sugar in a double boiler.
  3. Whisk eggs in a separate large bowl.
  4. Using a ladle, slowly add warm butter into the eggs and whisk. Add all of the warm butter mixture to the eggs, continuing to whisk.
  5. Place the egg mixture on the double boiler and add agave syrup and vanilla. Simmer for 5 minutes.
  6. Using a sieve to remove clumps, add mixture into pie crust.
  7. Bake for 25-30 minutes. Allow to cool before slicing and serving.
