Gluten-free, vegan, paleo, sweet potato toast
Preheat oven to 400F. Line a baking sheet with parchment paper
Slice the sweet potato into 1/4" slabs.
Bake for 20 minutes, flip and bake for an additional 15-20 minutes.
Top with avocados, everything but the bagel seasoning, your favorite eggs, etc. And enjoy!
