Green Beans with Caramelized Onions and Toasted Almonds (gf, v)

  • 2 lb. green beans ends trimmed
  • 1/2 cup toasted almonds
  • 2 tablespoons olive oil
  • 2 onions thinly sliced
  • 1 teaspoon sea salt
  • 1-4 tablespoons water as needed
  • 1 tablespoon maple syrup
  • 2 teaspoons balsamic vinegar


  1. Fill a large pot with water add a large pinch of salt and bring to a boil over high heat. Add the green beans and cook until tender, about 5 minutes. Drain in a colander and rinse with cold water.
  2. In a large sauté pan over medium heat, add the olive oil, onions and salt, sauté, stirring often until caramelized, about 20 minutes. If burning starts to happen, add water 1 tablespoon at a time to deglaze pan,
  3. Add maple syrup and reduce. Add balsamic and cook until all liquid has been absorbed. Remove onions from the pan.
  4. In the same pan, over medium-high add the beans. Sauté, until heated through and beginning to brown, about 4 minutes. Transfer to a serving bowl, top with almonds and onions and serve immediately or keep warm in oven.
