Combine all ingredients in a medium non-reactive sauce pan.

Heat over medium heat until boiling.

Reduce heat and simmer for 25 minutes.

Remove the mixture from heat and pour it into a high-speed blender puree until smooth.

Transfer the mixture back into the saucepan and simmer for an additional 15 minutes. Season to taste. If it is too hot, add more maple syrup.
