Marshmallow Sweet Potato Bites

These vegan & gluten-free marshmallow and sweet potato bites with pecans are the quickest and easiest Thanksgiving sides that will appeal to everyone at your table!

Ingredients

  • 3 Large Sweet Potatoes
  • 1 Bag Dandies Marshmallows cut in half
  • 3 oz Pecan Halves

Instructions

  1. Preheat oven to 400F and line a large baking sheet with parchment paper
  2. Cut the Sweet Potatoes into 1/4" rounds
  3. Bake the Sweet Potatoes for 40 minutes, flipping halfway through.
  4. Turn the oven up to a broil.
  5. Top the rounds with marshmallow halves and a whole pecan.
  6. Broil until marshmallows begin to melt and brown, about 5 minutes.
  7. Enjoy!
