The key to a perfect hot sauce is using different types of peppers. More than one hot pepper adds a layer of complexity to hot sauces.
This hot sauce has the perfect balance of heat and sweet with help from the maple syrup.
Homemade sweet hot sauce
- 20 fresh chili peppers stems removed (I used a mix of thai bird, serrano, cayenne and jalapeno)
- 5 garlic cloves
- 1 cup apple cider vinegar
- 1 cup white vinegar
- 1-2 tablespoons maple syrup
- 2 tablespoons lime juice
- 2 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon onion powder
Combine all ingredients in a medium non-reactive sauce pan.
Heat over medium heat until boiling.
Reduce heat and simmer for 25 minutes.
Remove the mixture from heat and pour it into a high-speed blender puree until smooth.
Transfer the mixture back into the saucepan and simmer for an additional 15 minutes. Season to taste. If it is too hot, add more maple syrup.
