
Green Beans with Caramelized Onions and Toasted Almonds (gf, v)
Sweet and savory green beans

Ingredients
- 2 lb. green beans ends trimmed
- 1/2 cup toasted almonds
- 2 tablespoons olive oil
- 2 onions thinly sliced
- 1 teaspoon sea salt
- 1-4 tablespoons water as needed
- 1 tablespoon maple syrup
- 2 teaspoons balsamic vinegar
Instructions

Fill a large pot with water add a large pinch of salt and bring to a boil over high heat. Add the green beans and cook until tender, about 5 minutes. Drain in a colander and rinse with cold water.

In a large sauté pan over medium heat, add the olive oil, onions and salt, sauté, stirring often until caramelized, about 20 minutes. If burning starts to happen, add water 1 tablespoon at a time to deglaze pan,

Add maple syrup and reduce. Add balsamic and cook until all liquid has been absorbed. Remove onions from the pan.

In the same pan, over medium-high add the beans. Sauté, until heated through and beginning to brown, about 4 minutes. Transfer to a serving bowl, top with almonds and onions and serve immediately or keep warm in oven.
