Derby Day Chocolate Pecan Truffles (GF, V, P)
The first Saturday in May is sacred in my home state of Kentucky. Whether celebrating in the Bluegrass or from a far, these truffles will set the mood for any party.
- 1/2 cup oats
- 1 1/4 cup raw pecans
- 1/4 tsp sea salt
- 1 cups pitted dates roughly chopped
- 1 tablespoon maple syrup
- 1 tablespoon water*
- 8 oz chocolate chips*
- 1 teaspoon coconut oil
Line baking sheet with parchment paper.
Place the oats in the bowl of a food processor, process until finely ground. Add the pecans and salt and pulse until a grainy mixture forms.
Add the dates and maple syrup, process until sticky mixture forms. The mixture should easily stick together when you press it with your fingers. If it's not sticky enough and the mixture doesn't hold together, add 1 tablespoon water.
Using a tablespoon to measure, form dough into about 15 balls.
Place in freezer to chill for 10-15 minutes
Meanwhile, melt the chocolate and coconut oil in a double boiler or in the microwave.
Dip the formed balls in the chocolate and return to the freezer for at least 1 hour or in the fridge overnight.
*If not gluten-free, you can substitute Kentucky Bourbon for water **I use Enjoy Life chocolate
