
Black Bean Burgers and Sweet Potato Fries
Vegetarian and gluten-free quinoa-black bean burgers. These can be done two ways; on a burger bun, or make it a lettuce wrap! Also, my husband loves to add bacon to his!

Ingredients
Sweet Potato Fries
- 2 medium sweet potatoes
- 1 tablespoon cornstarch or arrowroot starch
- 1/2 teaspoon sea salt
- 1/2 teaspoon chili powder
Black Bean Burgers
- 1/2 cup quinoa
- 1/2 cup walnuts
- 1/2 onion
- 1 large clove garlic
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon sea salt
- 1 teaspoon hot pepper sauce
- 1 egg or flax egg
- 1 15 ounce can black beans, drained and rinsed
- 1/4 cup flour or starch
To Assemble
- Buns gluten-free if needed, optional
- Lettuce
- Ketchup
- Mayonnaise
- Hot sauce
- Cooked Bacon optional
- Whatever else you love! You do you.
Instructions
Sweet Potato Fries

Line a large baking sheet with parchment paper and preheat the oven to 400F

Cut the ends of the sweet potatoes off, and slice into 1/4ā slabs. Slice again into fries that are 1/4ā wide and 1/4ā thick.

In a large bowl, add the sweet potatoes and starch, toss to combine. Add the olive oil, salt, and chili powder, toss to combine.

Arrange the sweet potatoes on the large baking sheet, careful not to overcrowd.

Bake for 40 minutes, tossing halfway through.
Burgers

Preheat the oven at 400F. And line a baking sheet with parchment paper.

Cook the quinoa according to package directions and allow to cool.

In the bowl of a food processor, add the walnuts, onion, and garlic. Process until finely minced.

Add the cumin, chili, sea salt, hot sauce, egg, 1/2 cup of the quinoa, and 1 cup of black beans. Process until almost smooth.

Add the mixture to the bowl and fold in the remaining quinoa, black beans, and flour. The mixture may be wet, that is normal.

Using a 1/3 cup measuring cup lined with cling wrap, form burgers. Using the bottom of the measuring cup, lined with cling wrap, lightly press down on the burgers to flatten a little.

Bake for 40 minutes, flipping halfway through. If sweet potato fries are still cooking, then these can go in the same oven on the lower rack.
