It’s that time of year when I eat  oatmeal on repeat for breakfast every morning. This is my newest obsession. The warming cinnamon and nutmeg pair perfectly with maple sautéed apples and oatmeal.

Apple Pie Oatmeal

Ingredients

  • 1 honeycrisp apple
  • 2 teaspoons water
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon ginger
  • Pinch of salt
  • 1 tablespoon maple syrup
  • 1 cup gluten-free oats
  • 2 cups non-dairy milk

Toppings, optional

  • Pecans
  • Chia Seeds
  • Non-dairy yogurt

Instructions

  1. In a sauté pan over medium heat, add the apple and water. Bring to a simmer and cook, stirring often, until the liquid is absorbed. Add the cinnamon, nutmeg, ginger and salt, toss to combine. Add the maple syrup and cook until apples are tender, about 5 minutes.
  2. In a sauce pan over medium heat, add the oats and milk. Bring to a boil, reduce heat and cover. Cook, stirring occasionally, for 10 minutes.
  3. Finish with desired toppings and enjoy!
